Balsamic-Berry Beef (quick, elegant and yummy) from Maria Evans

In a skillet, add 2-3 Tbsp. olive oil and two thinly sliced onions. Cook on medium high but watch closely. Add salt and fresh ground pepper to taste.  

When onions get translucent and begin to caramelize (get a beautiful golden hue), lower heat and add 1/4 cup balsamic vinegar and 1/4-1/2 cup seedless raspberry jam or preserves (depending on how sweet you like it.) Mix until all onions are covered then removed contents of pan to serving dish.  

Turn heat up in skillet and grill any type of steak you like (strip steaks and sirloins work well). Sear on each side; then cook until medium rare.  

Return onion mixture to pan; coat steaks well with sauce and top with onions. Enjoy!
